My new favourite recipe book is the latest from Green Kitchen Stories  , “Green Kitchen at Home”. If you have not heard of them you should definitely check out their website and social media sites; amazing and beautiful vegetarian food. Looking through their book last night (looking for some dessert inspiration), I came across their porridge recipes. One of these was a carrot version, which gave me the inspiration for todays recipe.

I have to admit, their recipe was a little more complex however I was looking for something simple with the ingredients I had in my cupboard. The only unique addition was Black Bean Powder. This is a protein rich superfood, completely vegan, a source of fibre and adds a delicious sweet taste without any added sugar. This can be easily left out and add an extra tbsp. of oats. Enjoy!

Recipe – Serves 2:

  • 1/2 cup rolled oats
  • 1.5 cups of almond milk  or water (any type of milk will work fine)
  • 1tbsp black bean powder (I used Jimmy Blacks Organic black bean powder)
  • 1 large carrot grated
  • 1tsp each of ground ginger & cinnamon
  • 1/4tsp cardommon
  • Optional – 2tbsp sultanas or other diced dried fruit
  • Chopped Nuts, Sliced Banana, Honey & extra milk to serve

Add all ingredients into a pot and stir on a medium heat until lightly simmering. Turn down the heat slightly and leave until carrot is soft and desired consistency is reached (approx. 10 min). Add extra liquid or oats if required to reach desired consistency.

Serve with desired toppings.
