Muesli or granola would have to be one of my most favourite foods. As someone who started off in Product Development within the food industry, I quickly learnt I could never work in the cereal category. I just would not be able to stop eating it! This recipe is a super quick and easy concoction which my boyfriend dubbed, my best one yet.

Makes about 4 cups.


  • 1 1/2 cups of dried coconut flakes
  • 1 cup pecans
  • 1/2 cup almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup buckwheat (soaked overnight then drain and roast in the oven for about 15 min at 180deg C to dry off and crispen up)
  • 1/3 cup goji berries1/4 cup coconut oil
  • 1tsp cinnamon
  • 1/2tsp cardamom
  • 1tsp ginger
  • 1 1/2 tbsp. rice malt syrup

Heat oven to 180deg C. Toss all ingredients in a bowl first to coat everything in the spices and coconut oil. Then throw everything onto a baking tray lined with baking paper (makes it less messy) and spread out the mixture evenly across the tray. Bake in the oven for about 30min or until your desired “crispyness” is reached.

Scale up or down the ingredients depending on your requirements.

Hint: If you don’t want the goji berries to dry out too much add them about 1/2 way through the cooking time.
